Roasted Balsamic Tomatoes With Eggs

Caprese salad is one of my faves. It's so simple - just tomatoes, mozzarella, basil, oil, and vinegar. But oh, that combination is magic! Here is a brunch recipe (or any meal, really) that combines the flavors of Caprese salad with eggs. Roasting the tomatoes intensifies and sweetens their flavor.

This dish can be an appetizer or a protein-filled meal for four to six people. You can mop it all up with a good baguette. But because of the eggs this dish would make an amazing breakfast too. Don’t be afraid to whip up this simple, healthy, and delicious meal for anytime of day.

It’s easy to put assemble and makes the house smell wonderful. 

You can use four eggs, six eggs, or as many as you like. The basil will brighten your day right up! Not many better smells than fresh basil. It looks good, is absolutely tasty and you’ll be so surprised at how easy it is to make.

Ingredients:

  • 6-8 Roma tomatoes

  • 2 teaspoons sugar

  • 1/4 cup extra virgin olive oil

  • 1/4 cup balsamic vinegar

  • 3 sprigs fresh thyme

  • 1/2 cup fresh basil, chopped

  • 4 ounces mozzarella, chopped or grated

  • 6 large eggs

  • Salt, pepper

  • Loaf of French bread

Preparation:

  1. Slice the tomatoes lengthwise and place in an oven-safe skillet cut side up.

  2. Sprinkle with sugar, then drizzle with the olive oil and balsamic vinegar.

  3. Sprinkle with salt and pepper. Strip the thyme stalks and scatter leaves over tomatoes.

  4. Roast in the oven at 400 degrees until tomatoes are soft and some of the liquid has evaporated.

  5. Take skillet out of the oven. Turn the heat to 425 degrees.

  6. Carefully crack eggs into spaces between the tomatoes.

  7. Sprinkle mozzarella and basil over everything. Place skillet back in the oven for 5-10 minutes, until eggs are as cooked as you want (if you're pregnant, the eggs need to be cooked until firm).

  8. Remove from oven and serve over slices of toasted French bread. Add a drizzle of olive oil and vinegar if you like.

If you add some onions, garlic, and peppers to your tomatoes along with spices like cumin, paprika, and coriander, you have shakshouka, a Mediterranean egg dish. Experiment and find your winning flavor and spice combinations.
