Easy Chopped Veggie, Bacon, & Cheddar Salad
I am in the mood for vegetables! Not the kind you have to cook but the kind that you can just chop up and throw together and have something delicious.
Even though I love vegetables but don't eat enough of them. Sound familiar? Here is a salad that makes it really easy to eat veggies. I make it with broccoli and cauliflower, but you could add or substitute fresh squash or zucchini, sugar snap peas, whatever you have on hand.
This recipe is a great side dish and you could even take for lunch one day.
What could be easier than chopping a few veggies and assembling them with a few flavorful ingredients?! This is super healthy and something that you can throw together in a matter of minutes and enjoy for a couple of days.
Ingredients
2-3 cups broccoli, chopped
2-3 cups cauliflower, chopped
1/2 cup red onion, chopped
1/2 pound crisp cooked bacon, chopped
1/2 cup grated cheddar cheese
1/4 cup raisins or dried cranberries
1 cup mayonnaise
2 tablespoons apple cider vinegar
Optional: 1 tablespoon stevia sweetener
Instructions
In a large bowl, combine broccoli, cauliflower, onion, bacon, cheese, and dried fruit.
Stir together mayo and vinegar.
Pour the mayo mixture over the vegetables.
Toss to combine. Done!
This can be eaten right away at room temperature, or covered and refrigerated for up to a week. I think I'll try adding a chopped apple next time.
Remember to use this recipe as just a template. You can add all kinds of other vegetables. You don't have to follow the recipe exactly, use your imaginations, and get creative. There's really no way to mess this up.
