Cauliflower rice
Stir fries and Asian foods are frequently served over rice. Delicious, but starchy. Cauliflower is an alternative that gives you the same chewiness and texture of rice, but with less starch and more fiber. Cauliflower rice is one of the most versatile dishes you can make, because it is so easy to flavor. It can be a meal by itself, or can serve as a base for anything that you would usually serve with rice. Stir-fried chicken or beef, stews, beans, broiled fish. Even if you're not a fan of cauliflower, you will love it!
Ingredients:
1 head of cauliflower, cut into large chunks
1 medium onion, diced
1 tablespoon coconut oil or olive oil
Optional - stir in one or all of these tasty additions:
1-2 tablespoons soy sauce
2 cloves chopped garlic
1/2 inch grated fresh ginger
1 finely diced carrot
8 oz chopped mushrooms
1 scrambled egg
Preparation:
Place cauliflower chunks into bowl of food processor or blender. Pulse briefly until cauliflower is the consistency of rice. You may need to do this in several batches. Empty into large bowl.
Heat the oil in a large skillet, and cook the onion 5-7 minutes, until translucent. If you are adding any of the optional ingredients, now is the time. Stir for another minute or two.
Add the cauliflower, stir, and cover. Heat for 5-7 minutes, until cauliflower is softened. Salt and pepper to taste. Done!
