I am in the mood for vegetables! Not the kind you have to cook but the kind that you can just chop up and throw together and have something delicious.
Even though I love vegetables but don’t eat enough of them. Sound familiar? Here is a salad that makes it really easy to eat veggies. I make it with broccoli and cauliflower, but you could add or substitute fresh squash or zucchini, sugar snap peas, whatever you have on hand.
This recipe is a great side dish and you could even take for lunch one day.
What could be easier than chopping a few veggies and assembling them with a few flavorful ingredients?! This is super healthy and something that you can throw together in a matter of minutes and enjoy for a couple of days.
- 2-3 cups broccoli, chopped
- 2-3 cups cauliflower, chopped
- 1/2 cup red onion, chopped
- 1/2 pound crisp cooked bacon, chopped
- 1/2 cup grated cheddar cheese
- 1/4 cup raisins or dried cranberries
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- Optional: 1 tablespoon stevia sweetener
- In a large bowl, combine broccoli, cauliflower, onion, bacon, cheese, and dried fruit.
- Stir together mayo and vinegar.
- Pour the mayo mixture over the vegetables.
- Toss to combine. Done!
This can be eaten right away at room temperature, or covered and refrigerated for up to a week. I think I’ll try adding a chopped apple next time.
Remember to use this recipe as just a template. You can add all kinds of other vegetables. You don’t have to follow the recipe exactly, use your imaginations, and get creative. There’s really no way to mess this up.
